Sosarian butchers - along with jerky makers, tanners, cleaners and plague doctors - are employed by the Trunk and by the city’s cattle barons as assassins, demogogues and agitators.
The original Lords Sanguine were twelve butchers. Their name comes from their bloody work, and was a pejorative, although they now harvest blood from the Tarrasque which may have encouraged the name to stick.
The butcher bird is named after this profession.
